Like Nilla Wafers, Only Better

This recipe started as a what if.

What if Nilla Wafers were super amazingly good, instead of just merely fantastic. So, I found a recipe to adapt on Sugar Spun Run and then, just went a little extra with my favorite local rum and vanilla. The results were fantastic. Next time I make them, I’m going to brown the butter first, so stay tuned, kids.

Instructions

Mise en Place

Gather your ingredients, line two baking sheets with parchment paper and get out a pastry bag and a large round tip

Preheat Your Oven

To 350F

Dry Ingredients

In a medium bowl, combine flour, baking powder and salt. Give it a bit of a whisk to make sure everything is combined.

CreamING

Add your butter to a large mixing bowl or your stand mixer and break it up until it’s soft. Turn your mixer to medium high, add your sugar and beat until creamy and light.

Fluffing

Add your eggs, one at a time. Then add vanilla, rum and milk.

Mixing

Add your flour mixture to your beautiful, fluffy butter mixture, a little bit at a time, stirring gently on low speed.

Baking

Scoop your dough (it’ll be really soft, but that’s okay) into a pastry bag with a big tip or cut the end off. Pipe one inch rounds onto the parchment paper, leaving two inches on each side. Pour a little bit of milk into a ramekin, and using the milk to wet a spoon or spatula, squash down the cookies a bit. Then, throw them in the oven and bake until golden brown at the edges. About 15 minutes.

Cool

Cool on the sheet for five minutes, then transfer to a cooling rack. Try to not eat them all.
